Man Sized Steak Salad penguin: 1 1/2-pound beef boneless sirloin steak, 1 1/2 inches thick
1 jar (4.5 ounces) sliced mushrooms, drained
1 medium green pepper, cut into thin strips
1/3 cup red wine vinegar
1/4 cup salad oil
1 teaspoon salt
1/2 teaspoon onion salt
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper
1/4 teaspoon dried tarragon leaves or 1 teaspoon snipped fresh tarragon
2 cloves garlic, crushed
Lettuce cups (salad greens)
Cherry tomatoes
Slash diagonally outer edge of fat on beef steak at 1-inch intervals to prevent curling (do not cut into lean). Set oven control to broil and/or 550º. Place beef on rack in broiler pan. Broil with top about 2 inches from heat until medium, about 13 minutes on each side.
Cool beef; cut into 3/8-inch strips. Arrange in ungreased rectangular baking dish, 13x9x2 inches. Place mushrooms on beef; top with pepper strips.
Combine remaining ingredients except greens and tomatoes; pour over beef and vegetables. Cover and refrigerate at least 3 hours, spooning marinade over vegetables occasionally.
Remove beef and vegetables with slotted spoon onto salad greens; garnish with tomatoes. 4 servings.
