Need a recipe! alonewith2: Okay, so the apple trees are all blossoming now. I can't stop thinking about all the tastey apples that will be available in the fall. Also in the fall, my hometown is home to the Pennsylvania Apple and Cheese Festival (don't ask!). So, my taste buds are going in to overdrive. I can't get the image of caramel apple cheesecake out of my mind....
...so I was wondering if anyone has ever tried to make this yummy sounding concoction, and if so, can you share the recipe with me?!!

Caramel Apple Cheesecake Recipe courtesy Paula Deen

1 (21-ounce) can apple pie filling
1 (9-inch) graham cracker crust
2 (8-ounce) packages cream cheese, at room temperature
1/2 cup sugar
1/4 teaspoon vanilla extract
2 eggs
1/4 cup caramel topping
12 pecan halves, plus 2 tablespoons chopped pecans
Preheat the oven to 350 degrees F.
Reserve 3/4 cup of the apple filling; set aside. Spoon the remaining filling into the crust. Beat together the cream cheese, sugar, and vanilla until smooth. Add the eggs and mix well. Pour this over the pie filling.
Bake for 30 to 35 minutes, or until the center of the cake is set. Cool to room temperature.
Mix the reserved pie filling and caramel topping in a small saucepan and heat for about 1 minute, or until spreadable. Spoon the apple-caramel mixture over the top of the cheesecake and spread evenly. Decorate the edge of the cake with pecan halves and sprinkle with chopped pecans. Refrigerate the cake until ready to serve.

For some reason, one of my kids can't stand baked apples!. He doesn't like apple pie or applesauce either...but I was hoping if it was covered in caramel and added to cheesecake, he'd reconsider! Lord knows I don't need to be stuck eating the whole thing by myself!!

I do not have an apple cheesecake recipe but I have an Apple Crisp recipe that has been around forever, curtesy of Betty Crocker.
Apple Crisp
4 cups sliced apples
¾ cup brown sugar
½ cup flour
½ cup oats
1/3 cup butter
¾ teaspoon ground cinnamon
¾ teaspoon ground nutmeg
Heat oven to 375º. Arrange apples in greased square pan, 8X8X2 inches. Mix remaining ingredients and sprinkle over apples. Bake about 30 minutes and serve warm with ice cream.
I make this whenever I have apples in the house and eat it with ice cream. I also increase the brown sugar and butter, just to make it extra sweet. Perhasp your son would like it that way. Enjoy.
