Right now I'm at the chocolate stage, but I hope to graduate to fudge, then hard candy. I have to get a double boiler and a candy thermometer first.

Get a good quality candy thermometer. Go to a local restaurant supply store for one or order one from J.B. Prince online.

Also there are some excellent books out there about chocolate and how to properly temper it.
