Good healthy school lunches for grown-ups? tara: I start law school next week (eeeek), which means I won't have a lot of time or money.
There's a deli in the law school, but, well, ick. Even if it's good, it'll get old (and expensive) fast.
So...what should I pack for lunch? I have access to a fridge and a microwave, and I'll also have a locker (just like high school). I know some (many) of my lunches will be the previous night's leftovers, packed in a bento box to look pretty (I got bentos instead of a regular lunch bag/box), but what else? What's quick, cheap and healthy?

There's a Japanese market by my parents' house in the Chicago suburbs; I got a big box for $6 and a little box for $11 (the little box is a bit more complex and has built-in chopsticks!). You can get them online, too.
A true Japanese bento is all about balance... an equal ratio between rice (or noodles) and everything else. Then, a balance between fruit and vegetables and meat/protein. Sweet, salty, bitter, sour should all be represented, as should a variety of colors. If I had time, I'd do a chirashi (mixed sashimi over rice -- but I'd do veggies) in the bottom, with gyoza, Japanese pickles and pineapple on the top, but I won't have the time. It'll probably be leftover spaghetti on the bottom, with carrot and celery sticks, an orange and a cookie or something on top.

Re: Good healthy school lunches for grown-ups? katelyn: I pack lunch every day as well. We have a rotating cafe` where I work - different vendor every day which is nice, but you can't get anything under 6 bucks.
I love leftovers, but on days I don't have leftovers I pack a slim fast and sandwich stuff. Wheat bread, sliced turkey, cheese, tomato and alfalfa sprouts. I separate all of it into it's own seran wrap first so it doesnt get soggy.
Easy, cheap and healthy.
