Sunday Roasted Chicken (for GS) Plucky: Another easy one that just takes a little prep and some oven time.
Ingredients:
Roaster chicken (whole)
McCormick 1-Step Chicken Seasoning (Garlic Herb)
Butter or margarine
Preheat oven according to directions on the packaging
1. VERY IMPORTANT!!! Remove the ucky stuff from the cavity. Blech.
2. Rinse bird with cold water and pat dry.
3. Place in roasting pan or adequate glass baking dish.
4. Slather generously with butter or margarine over entire chicken.
5. Sprinkle chicken seasoning all over, generously.
6. In the cavity of the chicken, put a heaping tablespoon of butter or margarine and a tablespoon or two of the seasoning.
7. Cook, uncovered, according to the time on the packaging if you're not used to cooking. If you are, look for the skin to become crispy and golden brown. Poke the breast area with a fork - if the juices run clear, you're done. Of course, if you have gotten a roaster with a built in pop-up thingy, there is no guess work.
8. Make sure to let your chicken rest (or cool a bit) when you remove it from the oven to let the juices settle in. If you carve too soon, the meat will be too dry.
Again, I do this on Sunday afternoons and use the meat all week. It's the absolute best for chicken salad and pasta dishes. Enjoy!

I'm on day 5 of Atkins, and having leftover roasted chicken handy all week for snacking will be AWESOME. ;) I'm not big on boiled or fried chicken breast.
