Why I'm up so late Plucky: I really wish I could post a step-by-step recipe for the chili I'm making right now, but I couldn't tell you specific measurements.  I started too late so I'm going to be up forever waiting for it to be done.

I pulled a Stooge move - I went to add more garlic and hadn't placed the plastic sifter-lid back on the bottle.  So, I dumped about 3/4 of the container into the pot.  Had to scoop a bunch out and then lost some beans & meat in the process.  Then had to taste-test to determine what had to be added back in.

Just tasted it again and it is freaking rocking!  Too bad I'll never be able to make this exact batch again!

Anyone have any good chili recipes?  It's that time of year!!

Hamburger meat
Chili seasoning
Corn

Sounds like my recipe, but without the corn.  I save the corn for the cornbread.  ;)
Re: Why I'm up so late kimberly: I saute finely chopped onions, fresh garlic and mushrooms in with ground beef, it gives it a really nice flavor, than add the stewed tomatos, beans and whatever seasonings you want(I use chili powder and a bit of paprika). I cook it on low heat very slowly to let the flavors blend. It's always better the next day though!
