Shredded cheese in a tortilla - microwave for 30 or so seconds depending on your microwave...

dip in salsa!  A little dairy and a little veggie! :0)

You can also add chicken or beef to it. 

I also cut up apples and put peanut butter on it.  they love it.

My 6 year old daughter loves burritos.  I put out a variety of things like brown rice, black beans, grilled chicken, lettuce, tomato, sauteed vegetables, homemade salsa and cheese for her to put in her burrito and she makes it herself.  I give her a grater and she grates her own cheese.  She didn't like salsa before, but now she does, and she's eating black beans again, which she used to eat every day as a toddler but then suddenly stopped. 

If you let them make it themselves, they will generally eat it, which is why cooking with them is a good way to get them to try new things.

You know, go all out.... have bananpancakes, bacon, OJ, or french toast and eggs...

sorta a novelty, but we really like breakfast and rarely eat it.

Re: An idea for kids to eat? ambrosia: My boy is also a very picky eater, here is what I do and it has worked pretty well so far, might not be for everyone, my boy is 6 :) When I want him to eat something different which I often do (NO BLAND FOOD, always something interesting), I make a HUGE deal out of it :D like a used car dealer trying to sell that 5 year old car as if it's the only "gotta have it", I tell him about the auspicious day when we are going to cook this international meal with complex recipes etc etc and how awesome it is going to be, because I do this every week I start getting him excited the week before, so I show him pictures from a book, keep talking about all the ingredients that go in the final meal etc..when I cook, he is very involved and by the time the food is done, he can't wait to try it because of the shear excitement of all the hoohah...I got him to try Pad Thai the other day which he would have NEVER eaten before:) I used to a Marketing major, go figure :)
