homemade Hummus!! YUM!!! Matt: Hi guys!
I've been playing with a recipie that I got a few months ago for Hummus..
For those of you that are unfamiliar with it, Hummus is a spread that is mediterranean in origin that is used on pita bread, chips, or mixed in salads...
I absolutely LOVE this stuff.. Its easily made in about 3 minutes, healthy, and exotic..
Recipie:
1 can chick peas or garbanzo beans ( drained )- soup can size
2 tablespoons of Tahini ( sesame paste )
5 cloves of garlic
The juice of one fresh lemon
1 small pinch of kosher salt
1 to 2 teaspoons of fresh parsley flakes
olive oil, about 2 + tablespoons for consistancy.. Depends on how you like it..
1 small pinch of cumin
Combine all ingredients in a mixing bowl, use a garlic press for cloves of garlic and use a pestle, or better yet a pasty blender to mix/crush hummus to rough consistancy .. ( pastry blender is a small hand used device - non electrical - That looks like a stirrup on a saddle.. very cheap and easily found.)
Mix adding more olive oil to get desired consistancy... I like mine the consistancy of chunky wall spackle.. LOL
Let sit for half an hour and dig in... Garnish with fresh parsley..

I always put a dash of cheyenne in mine! And I use about 5 green onions (cut to 1 inche long and blended in processor with garlic cloves, parsely, and chickpeas).
