I know, I know... just kind of bothersome. She's a supercool person every other time, but so far this has happened like 3 times... and each time I have to tell her "Don't worry! If I did have an issue I wouldn't hesitate to tell you". I'm just really easy going and I guess figure other people will be that way too.

3 times in two weeks seems like a tiny red flag to me. I would suggest you sit her down and let her know that if something were bothering you, you would be direct and tell her about it. Tell her that is just the kind of guy you are and she does not have to worry about trying to guess about whether something may be wrong. Hopefully, this will ease her mind. If it does not and this continues, consider the flag not so tiny.
Re: Hyper Sensitivity? YellowJacket: I agree with Bea and Crushed -- I'd give it a bit of time and see if she doesn't get more comfortable once your relationship is on stronger ground. I'd definitely talk about it with her like Magalucia said. Hopefully a good middle ground can be reached.
